Hands-on Butchery Classes Hosted by Black Sage Butcher

A fabulous experience for those who would like a hands-on lesson in meat and traditional butchery skills. Our intimate classes offer a fun and relaxed evening hosted by our Head Butcher, Matt Leyes. This is an opportunity for our guests to try their hand at light butchery and learn more about where their meat comes from while also picking up a new skill. Plus, with every class you have the benefit of bringing home some product for you to enjoy at home.

Class Options

Butchery 101

$175 per person (incl. GST)

Participants will each break-down one whole chicken following Matt’s direction (and get to keep their work!). Together you will also butcher an entire side of pork, of which you’ll each get to take some home. Throughout the class you will learn the origins of various pork cuts, explore different butchering techniques, and gain hands-on cutting experience.

Sausage Making

$150 per person (incl. GST)
Fall 2024 date to be advised. Contact us to inquire about private classes.

Together we will make two flavours of full-sized pork sausages, both gluten-free:

  • Sage & onion (aka “breakfast sausage”)
  • Spinach & feta cheese

Participants will get to take home sausages of each flavour.

Terms & Conditions

Each class requires a minimum of 4 students to go-ahead, with a maximum class size of 8 students. Must be 18 years or older to participate. All tools will be provided. A spot is only guaranteed once your ticket price has been paid in full. Cancel your class registration up to 7 days in advance for a rescheduled class if available or the equivalent in shop credit; no compensation provided for cancellations thereafter.

We have a limited number of spaces available in each class, so book as soon as possible to confirm your spot and avoid disappointment. These will be the last butchery classes offered until after Thanksgiving 2024.

Class tickets may be purchased:

  1. Via our online store, by making your selection on this page. If purchasing the class for someone else, please include their full name, phone number and email address in the “Notes” section during checkout.
  2. In person at the shop during open hours (sorry, we do not accept credit cards over the phone).
  3. Via e-transfer to bsbpreorder@gmail.com once your spot has been confirmed by us. **Please do not send an etransfer until your order has been confirmed.**
